Our Preserved Lemons are pure sunshine in a jar - juicy, fruity, tart and tangy, with just a hint of citrus sweetness. Most commonly used in Moroccan cuisine, they are also popular in Middle Eastern, Indian and North African dishes.
Use as an alternative to lemons in a recipe, or to add brightness and authentic Moroccan flavour to tagines, curries and couscous. Their exotic flavour and colour adds interest to many meat and vegetable combinations such as lamb ragout, eggplant ratatouille, bean or lentil salad, as well as to chicken, pasta, dips and dressings.

Rinse well before use to remove some of the salty flavour. Pull off and discard the flesh, or retain to use in a marinade. Cut the peel into small strips or leave in chunks and use as desired.
